Mornings can be hectic, but that doesn’t mean you have to sacrifice a delicious, satisfying breakfast! This meal prep breakfast bagel is the ultimate grab-and-go option, packed with protein, flavour, and just the right amount of indulgence.
At the heart of this bagel is a fluffy egg frittata, loaded with vibrant veggies for a nutritious boost. A layer of smoky, melted cheese adds richness, while a dollop of fiery-sweet chili jam brings a perfect balance of heat and sweetness. All sandwiched between a bagel, this combo creates a breakfast that’s as delicious as it is convenient.
Make a batch at the start of the week, and you’ll have a café-worthy breakfast ready in minutes—just heat and eat! Whether you’re fuelling up for a busy workday or a weekend adventure, this meal prep bagel will keep you satisfied and ready to take on the day.

Makes 3 breakfast bagels

Ingredients
3 Bagels of choice
6 eggs
Spring onions x 2
Veg of choice – I used tomatoes and mushrooms
Fresh herbs such as basil or parsley for flavour
Smoked cheddar cheese
Chilli jam
Method
First, make your frittata. Preheat the oven to 180C. Line a loaf tin with some greaseproof paper.
Chop your spring onions, herbs, and veggies
Crack your eggs into a bowl and mix with a fork
Add your chopped spring onions, herbs, and veggies to your eggs along with some salt and pepper and combine
Add your egg mix to the lined loaf tin and place in the oven for 20-30 minutes until cooked through. Remove from the oven, allow to cool, and split in 3 squares
Now time to assemble your bagel – spread with chilli jam, add one of your frittata squares, and a slice of smoked cheese. Wrap your bagels in tin foil and store in the fridge for up to 4 days
These are best consumed warm – remove the foil and heat on a plate in the microwave for 1.5-2 minutes
