Meal-Prep Breakfast Wraps

Busy mornings don’t have to mean skipping breakfast or relying on something that leaves you feeling hungry an hour later. These meal prep breakfast wraps are the perfect solution for anyone who wants a quick, balanced, and satisfying start to the day without the morning stress (myself included in this!).

Packed with protein-rich scrambled eggs, savoury pancetta, sautéed mushrooms, creamy avocado, and a touch of homemade chilli jam, these wraps are full of flavour and nutrition. A spoonful of soft cheese stirred through the eggs makes them extra fluffy and adds an extra boost of protein. Each wrap provides a balanced mix of protein, carbohydrates, and healthy fats to support energy levels, focus, and fullness throughout the morning.
They can be made in advance and stored in the fridge, ready to reheat in just five minutes in the air fryer or frying pan. Whether you’re heading to work, juggling school runs, or simply trying to build more consistent eating habits, these breakfast wraps are a practical and delicious option you’ll want to keep on repeat.

Makes 4 wraps
Ingredients:
4 Tortilla Wraps (choose seeded or wholemeal for higher fibre)
65g Smoked Pancetta (1 small pack)
250-300g Mushrooms
4 Large Eggs
1tbsp Soft Cheese
Chilli Jam (around 4 tsp)
1 Avocado
Method:
Cook your pancetta in a small frying pan until crispy.
Decant the pancetta into a small bowl and set aside.
To the same pan, add the mushrooms, season with black pepper, and cook for around 10 minutes.
Decant the mushrooms into a small bowl.
Add the eggs to the pan, and quickly scramble - stirring regularly.
Once the eggs are cooked, take the pan off the heat, add your soft cheese, and mix in.
Set up your 'wrap station' - get your avocado cut into slices and all your ingredients ready to add to your wraps.
Layer up your wraps starting with chilli jam, scrambled eggs, pancetta, mushroom, and avocado.
Roll your wraps up and wrap in tin foil to store in the fridge.
Once you're ready to eat your wrap, open it up in the foil and place in the airfryer on 200C for 5-6 minutes until crispy and warm - thank me later for the most delish breakfast you'll be going back to time and time again...
