Sausage, Apple, and Fennel Traybake

When you’re looking for a simple, hearty meal with maximum flavour and minimal effort, a traybake is the answer. This sausage, apple, and fennel traybake is a one-pan wonder that’s as easy to prepare as it is delicious. Perfect for a cozy family dinner or a stress-free weekend meal, it’s a dish that brings together savory, sweet, and earthy flavours in every bite. Perfect paired with a dollop of apple sauce.


The combination of sausage, caramalised apples, and roasted fennel creates a balanced meal that’s bursting with taste and texture, effortlessly. With everything cooked together on one tray, the flavours meld beautifully while leaving you with almost no washing up to worry about.

Ingredients


  • 3-4 large potatoes

  • 1/2 butternut squash or 3-4 carrots

  • 6-8 sausage (option for veggie or pork)

  • 2-3 apples

  • Oil

  • 3 tbsp fennel seeds

  • Salt & pepper


Method


  1. Preheat your oven to 180C fan/200C

  2. Chop up your potato and veggies

  3. In a large tray add your potato, squash/carrots, oil, fennel seeds, & season. Give everything a good mix and pop in the oven for 20-30 minutes until everything is starting to brown a little

  4. Give everything a good mix and pop your apple and sausages on top. Pop back in the oven for another 15-20 minutes until everything is cooked

  5. Serve with a gravy & a good dollop of apple sauce
