Mini-Egg Cookie Dough Millionaire

My Easter gift to you! You won't regret making these....



Makes ~12

Ingredients & Method:


Cookie-dough base:

  • 75g caster sugar

  • 150g butter

  • 225g plain flour

  • 150g mini eggs


  1. Put the sugar, butter, and flour into a bowl and run between your fingers to form a breadcrumb texture

  2. Crush your mini eggs using a rolling pin against the bag and add to the mixture

  3. Knead the mixture together until it forms a dough, with mini egg pieces scattered throughout

  4. Line a square 20cm x 20cm tin with greaseproof paper and press the dough into the bottom, place in the fridge


Caramel layer:

  • 175g butter

  • 115g caster sugar

  • 3tbsp golden syrup

  • 1 tin condensed milk (397g)


  1. Put all ingredients into a pan on a medium heat

  2. Continue to stir until all ingredients have melted (keep stirring to prevent the caramel burning!)

  3. Slowly bring the mixture to a gentle simmer, still stirring continuously, and simmer until the caramel darkens in colour

  4. Allow to cool for a few minutes then pour onto the cookie dough base

  5. Put in the fridge to set (allow around 30-60 minutes before starting your chocolate layer)


Chocolate top:

  • 100g milk chocolate

  • 100g dark chocolate

  • ~60g mini eggs (slightly smashed)


  1. Melt the milk and dark chocolate separately - either in short bursts in the microwave or using a heatproof bowl and boiling water

  2. Spoon blobs of each chocolate ontop of the caramel layer until the full caramel is covered, then marble using the back of a teaspoon or cocktail stick

  3. Top with the mini eggs

  4. Place in the fridge to set

  5. Chop into 12 pieces and enjoy!
