Mini-Egg Cookie Dough Millionaire

My Easter gift to you! You won't regret making these....

Makes ~12
Ingredients & Method:
Cookie-dough base:
75g caster sugar
150g butter
225g plain flour
150g mini eggs
Put the sugar, butter, and flour into a bowl and run between your fingers to form a breadcrumb texture
Crush your mini eggs using a rolling pin against the bag and add to the mixture
Knead the mixture together until it forms a dough, with mini egg pieces scattered throughout
Line a square 20cm x 20cm tin with greaseproof paper and press the dough into the bottom, place in the fridge
Caramel layer:
175g butter
115g caster sugar
3tbsp golden syrup
1 tin condensed milk (397g)
Put all ingredients into a pan on a medium heat
Continue to stir until all ingredients have melted (keep stirring to prevent the caramel burning!)
Slowly bring the mixture to a gentle simmer, still stirring continuously, and simmer until the caramel darkens in colour
Allow to cool for a few minutes then pour onto the cookie dough base
Put in the fridge to set (allow around 30-60 minutes before starting your chocolate layer)
Chocolate top:
100g milk chocolate
100g dark chocolate
~60g mini eggs (slightly smashed)
Melt the milk and dark chocolate separately - either in short bursts in the microwave or using a heatproof bowl and boiling water
Spoon blobs of each chocolate ontop of the caramel layer until the full caramel is covered, then marble using the back of a teaspoon or cocktail stick
Top with the mini eggs
Place in the fridge to set
Chop into 12 pieces and enjoy!
